How to make Breakfast Skillet


For 4 Servings:

A - 4 large eggs

B - 4 slices of bacon, diced

2 medium potatoes, peeled and diced

1 bell pepper, diced

1/2 onion, diced

2 cloves of garlic, minced

Salt and pepper to taste

2 tablespoons of oil

1/2 cup of shredded cheese

Fresh herbs such as parsley or chives for garnish

Recipe Directions

1. In a pan over medium heat, add 2 tablespoons of oil and sauté the diced bacon until crispy.

2. Remove the bacon from the pan and set aside. In the same pan, add the diced potatoes and sauté until they are golden brown and tender.

3. Remove the potatoes from the pan and set aside.

4. In the same pan, add the diced bell pepper, onion and minced garlic, sauté until they are tender.

5. Add the bacon and potatoes back to the pan, stir to combine.

6. Make four wells in the skillet, and crack an egg into each well.

7. Season the skillet with salt and pepper.

8. Cover and cook until the eggs are set to your liking. Sprinkle shredded cheese over the skillet.

9. Cover and let cheese melt.

10. Serve and garnish with fresh herbs.
