For 4 Servings:
4 boneless, skinless chicken breasts
Salt and pepper to taste
2 tablespoons vegetable oil
1/2 cup soy sauce
1/2 cup brown sugar
1/4 cup rice vinegar
2 cloves of garlic, minced
1 tablespoon grated ginger
1 tablespoon cornstarch
2 tablespoons cold water
Sesame seeds for garnish (optional)
Green onions for garnish (optional)
1. In a small bowl, mix together the soy sauce, brown sugar, rice vinegar, garlic, and ginger. Set aside.
2. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes, or until fully cooked.
3. Remove the chicken from the skillet and add the teriyaki sauce mixture to the skillet.
4. Bring to a simmer and cook for 2-3 minutes, or until the sauce has thickened.
5. Add the chicken back to the skillet and toss to coat in the sauce.
6. Cook for an additional 2-3 minutes, or until the chicken is heated through and the sauce is bubbling.
7. Serve the teriyaki chicken over rice or with a side of vegetables.
8. Garnish with sesame seeds and green onions (if desired).
